Mexican Quinoa

Ingredient list

* 2 Tbsp olive oil
* 2-4 gloves chopped garlic
* l medium onion, chopped
* 1 cup chopped assorted bell peppers (red, green, yellow, orange, the more color, the better)
* 1 can black beans, rinsed
* 1/2 large bag frozen corn
* quinoa
* 1/4 to 1/2 cup chopped fresh cilantro

1canblack beans, rinsed
0,50large bag frozen corn
-quinoa
0,25cup1/4 to 1/2 cup chopped fresh cilantro

Preparation

Sauté in olive oil chopped garlic, onions, peppers. If too dry, add a little reduced sodium or fat free chicken broth. Add 1/2 bag of frozen corn and canned black beans, rinsed.

For 1 cup dry quinoa, use 2 cups liquid. Use fat free or reduced sodium chicken broth for liquid. Add cooked quinoa to above mixture. Add 1/4 to /2 chopped fresh cilantro.

A great side dish with grilled chicken or fish.
