Meatless "Meatballs"

Ingredient list

Ingredients for Servings



3eggplant, peeled, diced, and steamed. Squeeze out moisture. (makes 3 cups)
1egg
1egg white
3cloves garlic, minced
3tspsonion, minced
5tspsgrated cheese
0,50tsporegano, dried
0,50tspbasil, dried
1tspground black pepper
1cupfresh parsley, chopped
2cupspanko bread crumbs

Preparation

Mix gently. May be refrigerated overnight for more flavor. Shape into small meatballs and either bake on greased cookie sheet or sauté in olive oil.

Note: There is little fat on these meatballs, so you must use a little oil so they do not stick.
