Sautéed Shrimp with Artichokes, Leeks, Tomato and Basil

Ingredients for Servings



1lb16/20 raw shrimp, peeled and deveined
1canartichoke hearts, drained, rinsed and quartered (or use frozen artichokes)
2leeks, diced
2tomatoes, diced, no seeds
0,50bunch fresh basil, slice into thin strips and reserve 4 tops for garnish
1lemon, cut in half
2Tbspsheart healthy margarine
2cloves of garlic, finely chopped
4Tbspsextra-virgin olive oil
-Salt & Pepper

Preparation

Heat a large sauté pan on stove on medium heat. Put olive oil in pan with chopped garlic and lightly brown.
Season shrimp with salt and pepper and add to pan. Sauté on high heat for 2 to 3 minutes. Add artichokes, leeks and tomatoes and sauté for another 2 minutes.
Add margarine, basil and the lemon juice. Remove from heat.
Arrange shrimp in bowls and spoon the sauce over the top. Garnish with fresh basil sprigs. Serve with sliced toasted Italian bread or on whole wheat pasta.
